France: The Franco-Prussian War 1870-71: The Siege of Paris: Inside the City: A reproduction of the Christmas Day 1870 menu from the Café Voisin, the finest restaurant of its day, on the 99th day of the siege. The enforced culling of animals from the Jardin des Plantes, together with the other exigencies of the situation, has by this time lead to some unusual dishes, although accompanied by some very fine vintages. For example, ''Consommé d'Éléphant'', ''Goujons Frits, Le Chameau rôti à l'anglaise'', ''La Terrine d'Antilope aux truffes'', as well as that old standby ''Le Chat flanqué de Rats''. We may consider ourselves fortunate that César Ritz, a waiter at the Voisin at the time, did not attempt to bring these dishes to London later. The origin of the reproduction (148 x 182mm.) uncertain but believed to date from c.1875.
